Ingredients

  • Soy Sauce1 cup soy sauce (240 ml)
  • Mirin5 oz mirin (142 ml)
  • Sesame Oil½ oz sesame oil (14.8 ml)
  • Sugar1 tbsp sugar (15 ml)
  • Rice Vinegar2 tbsp rice vinegar (30 ml)

Method

  1. Pour to the lines in order (bottom → top): SOY SAUCE, MIRIN, RICE VINEGAR.
  2. Season to finish: SUGAR (about 2 tsp), SESAME OIL (about 2 tsp).
  3. Cap the jar and shake until emulsified.

Can I use it as a marinade and a sauce?

Yes, but keep the portions separate. Never pour marinade that touched raw meat, poultry, or seafood back over the finished dish unless you bring it to a full boil first. Set aside a clean portion before marinating if you want a table sauce too.
