Ingredients

  • Garlic1 medium garlic clove, crushed & minced (~½ tsp)
  • Shallot1 Tbsp chopped shallot (15 ml)
  • Salt¼ tsp salt (1.25 ml)
  • Pepper¼ tsp black pepper (1.25 ml)
  • White Wine Vinegar1 Tbsp white wine vinegar (15 ml)
  • Duck Fat3 Tbsp duck fat, peanut oil, olive oil, or mix (45 ml)
  • Light Soy1 tsp light soy sauce (5 ml)

Method

  1. Pour to the lines in order (bottom → top): DUCK FAT, W.WINE VINEGAR, LIGHT SOY.
  2. Add by count: 4 CLOVES GARLIC, 1 SHALLOT.
  3. Season to finish: SALT (about 1 tsp), PEPPER (about ¾ tsp).
  4. Cap the jar and shake until emulsified.
