Ratio by volume: Cumin 3 ml, Smoked Paprika 3 ml, Sherry Vinegar 50 ml, Olive Oil 100 ml

Ingredients

  • Parsley1/2 bunch of parsley, finely chopped (30 g)
  • Oregano1/4 bunch of oregano, finely chopped (10 g)
  • Garlic1 garlic clove, finely chopped
  • Cumin1/2 tsp cumin seeds, crushed (2.5 ml)
  • Green Chile1 green chilli, deseeded and finely chopped
  • Smoked Paprika1/2 tsp pimentón (sweet smoked paprika) (2.5 ml)
  • Shallot1/2 shallot, finely chopped
  • Anchovy2 Spanish anchovy fillets, ideally Cantabrian
  • Sherry Vinegar50ml of sherry vinegar
  • Olive Oil100ml of extra virgin olive oil
  • Pepperfreshly ground black pepper (0.5 g)
  • Saltsalt (2 g)

Method

  1. Pour to the lines in order (bottom → top): Cumin, Smoked Paprika, Sherry Vinegar, Olive Oil.
  2. Add finishing notes: Parsley, Oregano, Garlic, Green Chile, Shallot, Anchovy.
  3. Cap the jar and shake until emulsified.
