Ingredients

  • Anchovy2 salt-packed anchovy fillets, rinsed and patted dry
  • Garlic2 garlic cloves
  • Shallot1 shallot, minced
  • Parsley1/2 cup finely chopped parsley (120 ml)
  • Mint1/2 cup finely chopped fresh mint (120 ml)
  • Scallion1/2 cup sliced green onion (120 ml)
  • Lemon Zest1 lemon, zested (2 g)
  • Lemon Juice1 lemon, juiced (45 ml)
  • Dijon Mustard1 Tbsp Dijon mustard (15 ml)
  • Red Wine Vinegar1/2 cup red wine vinegar (120 ml)
  • Salt1/2 tsp salt (2.5 ml)
  • Pepper1/2 tsp ground black pepper (2.5 ml)
  • Red Pepper Fla1/2 to 1 tsp mild crushed red pepper (3.75 ml)
  • Olive Oil3/4 cup extra-virgin olive oil (180 ml)

Method

  1. Pour to the lines in order (bottom → top): Parsley, Mint, Scallion, Lemon Juice, Dijon Mustard, Red Wine Vinegar, Salt, Pepper, Red Pepper Fla, Olive Oil.
  2. Add finishing notes: Anchovy, Garlic, Shallot, Lemon Zest, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
