- Palm Oil — 1/4 cup Red palm oil (60 ml)
- Ginger — 1/4 cup smashed ginger (60 ml)
- Turmeric — 1/4 cup smashed turmeric (60 ml)
- Onion — 1 large yellow onion, small diced
- Arbol Chile — 4 pieces of chili d' arbol
- Coriander — 1 tsp ground coriander (5 ml)
- Cumin — 1 tbsp cumin seed, toasted and ground (15 ml)
- Pepper — 1 tsp cracked black peppercorn (5 ml)
- Cinnamon — 2 pcs. Cinnamon Sticks
- Fenugreek — 1/4 tsp fenugreek seed (1.25 ml)
- Clove — 3 whole cloves
- Tomato Paste — 2 tbsp tomato paste (30 ml)
- Peanut Butter — 3/4 cup peanut butter (180 ml)
- Tomato — 1 cup Plum tomatoes (240 ml)
- Chicken Stock — 4 cups chicken stock (960 ml)
Method
- This sauce is cooked on the stove — the jar is for storing it, not making it.
- Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
- Finish off heat; adjust seasoning.
