Ingredients

  • Palm Oil1/4 cup Red palm oil (60 ml)
  • Ginger1/4 cup smashed ginger (60 ml)
  • Turmeric1/4 cup smashed turmeric (60 ml)
  • Onion1 large yellow onion, small diced
  • Arbol Chile4 pieces of chili d' arbol
  • Coriander1 tsp ground coriander (5 ml)
  • Cumin1 tbsp cumin seed, toasted and ground (15 ml)
  • Pepper1 tsp cracked black peppercorn (5 ml)
  • Cinnamon2 pcs. Cinnamon Sticks
  • Fenugreek1/4 tsp fenugreek seed (1.25 ml)
  • Clove3 whole cloves
  • Tomato Paste2 tbsp tomato paste (30 ml)
  • Peanut Butter3/4 cup peanut butter (180 ml)
  • Tomato1 cup Plum tomatoes (240 ml)
  • Chicken Stock4 cups chicken stock (960 ml)

Method

  1. This sauce is cooked on the stove — the jar is for storing it, not making it.

  3. Finish off heat; adjust seasoning.
