  • Fennelabout ½ bulb (100 g)
  • Onion1 small sliced (100 g)
  • Carrot60 g
  • Garlic4 cloves
  • Chile1 dried or pinch flakes (3 g)
  • Thyme2 sprigs (2 g)
  • Bay Leafabout 2½ leaves (0.5 g)
  • Saltto taste

Method

  1. This sauce is cooked on the stove. The jar is for storing it, not making it.
  2. Cook ingredients gently according to the published technique, adapted here as pantry quantities only.
  3. Finish off heat; adjust seasoning.
