Ingredients

  • Garlic4 unpeeled garlic cloves, roasted
  • Green Chileabout 1 chile (15 g)
  • Olive Oil¾ cup olive oil (180 ml)
  • Balsamic¼ cup balsamic vinegar (60 ml)
  • Salt1 scant tsp salt (5 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, BALSAMIC.
  2. Add by count: 4½ CLOVES GARLIC, 2 GREEN CHILES.
  3. Season to finish: SALT (about 1 tsp).
  4. Cap the jar and shake until emulsified.
