Ratio by volume: Olive Oil 60 ml, Lemon Juice 80 ml, Sumac 10 ml

Ingredients

  • Olive Oil1/4 cup EVOO (from pepita fry-off) (60 ml)
  • Lemon Juice1/3 cup fresh lemon juice (80 ml)
  • Sumac2 tsp sumac (or 1 tsp lemon zest) (10 ml)
  • Saltsalt (2 g)
  • Pepperpepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Olive Oil, Lemon Juice, Sumac.
  2. Add finishing notes: Salt, Pepper.
  3. Cap the jar and shake until emulsified.
