Ingredients

  • Parsley1 cup chopped flat-leaf parsley (240 ml)
  • Mint1/4 cup coarsely chopped mint (60 ml)
  • Oregano1 tsp oregano leaves (5 ml)
  • Olive Oil3/4 cup extra-virgin olive oil (180 ml)
  • Garlic1 small garlic clove, smashed
  • Anchovy1 anchovy, preferably salt-packed, rinsed
  • Capers1 Tbsp drained capers (15 ml)
  • Lemon JuiceJuice of 1/2 lemon (15 ml)
  • Feta4 oz feta cheese, crumbled (113 g)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
