Ingredients

  • Mayo1/2 quart (473 ml)
  • Horseradish1/4 cup fresh or jarred (60 ml)
  • Grain Mustard2 tbsp (30 ml)
  • Celery1/2 bunch, outer stalks and leaves removed, diced (120 g)
  • Shallot1/2 large, diced
  • Lemon1, juiced and zested
  • Garlic1/2 tbsp chopped (7.5 ml)
  • Parsley1/4 cup chopped (60 ml)
  • Cornichon1/4 cup chopped (60 ml)
  • Capers2 tbsp (30 ml)
  • Salt1/2 tbsp (7.5 g)
  • Pepper1/2 tbsp fresh-cracked (3.5 g)
  • Cayenne1/2 tbsp (4 g)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
