Ingredients
- Mayo — 1/2 quart (473 ml)
- Horseradish — 1/4 cup fresh or jarred (60 ml)
- Grain Mustard — 2 tbsp (30 ml)
- Celery — 1/2 bunch, outer stalks and leaves removed, diced (120 g)
- Shallot — 1/2 large, diced
- Lemon — 1, juiced and zested
- Garlic — 1/2 tbsp chopped (7.5 ml)
- Parsley — 1/4 cup chopped (60 ml)
- Cornichon — 1/4 cup chopped (60 ml)
- Capers — 2 tbsp (30 ml)
- Salt — 1/2 tbsp (7.5 g)
- Pepper — 1/2 tbsp fresh-cracked (3.5 g)
- Cayenne — 1/2 tbsp (4 g)
Method
- This sauce needs a blender — the jar is for storing it, not making it.
- Combine measured ingredients and blend until smooth.
- Taste and adjust salt and acid.
