Dutournier's sesame-muscat vinaigrette.

Ingredients
- Muscat120 ml Muscat de Rivesaltes reduced to 2 Tbsp
- Lemon Juicejuice of 1 lemon (30 ml)
- Sesame Oil4 Tbsp sesame oil (60 ml)
- Veal Stock2 Tbsp light veal jus (30 ml)
- Ginger½ tsp chopped ginger (2.5 ml)
- Oyster Coralabout 6 corals (15 g)
- Green Onion40 g
Method
- Pour to the lines in order (bottom → top): SESAME OIL, LEMON JUICE, VEAL STOCK.
- Shake-to-line (dashed marks): add OYSTER CORAL. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Add by count: 7½ GREEN ONIONS.
- Season to finish: MUSCAT (to taste), GINGER (about 1½ tsp).
- Cap the jar and shake until emulsified.
