Ingredients

  • Lemon Juice1/4 cup fresh lemon juice (from 2 lemons) (60 ml)
  • Red Wine Vinegar1 Tbsp red wine vinegar (15 ml)
  • Dijon Mustard1/2 tsp Dijon mustard (2.5 ml)
  • Olive Oil3/4 cup extra-virgin olive oil (180 ml)
  • Salt3/4 tsp kosher salt (of 1 1/2 tsp divided in dish) (3.75 ml)
  • White Pepper1/8 tsp freshly ground white pepper (0.62 ml)
  • Cayennepinch of cayenne pepper (0.3 g)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, LEMON JUICE, RED WINE VIN.
  2. Season to finish: SALT (about ¾ tsp), WHITE PEPPER (to taste), CAYENNE (a pinch), DIJON (about ½ tsp).
  3. Cap the jar and shake until emulsified.
