- Canola Oil — 2 Tbsp (30 ml)
- Onion — 1 large Spanish coarsely chopped (250 g)
- Garlic — 3 cloves coarsely chopped
- Chile Powder — 2 Tbsp ancho + 1 Tbsp pasilla + 1 Tbsp New Mexican (30 g)
- Tomato — 3 cups canned plum tomatoes with juices puréed (720 g)
- Water — 1 cup (240 ml)
- Ketchup — 1/4 cup (60 ml)
- Red Wine Vinegar — 1/4 cup (60 ml)
- Worcester — 2 Tbsp (30 ml)
- Brown Sugar — 1/4 cup dark (50 g)
- Honey — 1/4 cup (60 ml)
- Molasses — 1/4 cup (60 ml)
- Dijon Mustard — 2 Tbsp (30 ml)
- Chipotle — 2 chiles puréed (30 g)
- Peanut Butter — 1/2 cup smooth (130 g)
- Salt — to taste
- Pepper — to taste
Method
- Pour to the lines in order (bottom → top): Canola Oil, Water, Ketchup, Red Wine Vinegar, Worcester, Honey, Molasses, Dijon Mustard.
- Add: Onion, Garlic, Chile Powder, Tomato, Brown Sugar, Chipotle.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
