  • Lemon Juice60 ml lemon juice
  • Dijon Mustard½ tsp mustard (2.5 ml)
  • Shallot2 tsp shallots (10 ml)
  • Green Pepper1 tsp chopped green pepper (5 ml)
  • Red Pepper1 tsp chopped red pepper (5 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)
  • Garlic Powder0.5 g
  • Parsleychopped parsley as needed

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, LEMON JUICE.
  2. Season to finish: SHALLOT (¼ shallot), GREEN PEPPER (about 1 tsp), RED PEPPER (about 1 tsp), SALT (to taste), PEPPER (to taste), GARLIC POWDER (a pinch).
  3. Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
