- Cucumber2 charred grilled cucumber halves (from 12 oz Persian) (340 g)
- Rice Vinegar¼ cup unseasoned rice vinegar (60 ml)
- Dijon Mustard1 tsp Dijon (5 ml)
- Honey1 tsp honey (5 ml)
- Garlic1 garlic clove, smashed
- Salt¾ tsp kosher salt (3.75 ml)
- Vegetable Oil¼ cup neutral oil (rice bran) (60 ml)
Method
- This sauce needs a blender. The jar is for storing it, not making it.
- Combine measured ingredients and blend until smooth.
- Taste and adjust salt and acid.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
