Ingredients

  • Capers1 Tbsp capers, drained and minced (15 ml)
  • Anchovy4 anchovy fillets in oil, drained and minced
  • Garlic1 garlic clove, minced
  • Mint1/4 cup minced mint (60 ml)
  • Parsley1/4 cup minced parsley (60 ml)
  • Turnip Greens1/4 cup minced turnip greens (60 ml)
  • Lemon Juice1/4 cup fresh lemon juice (60 ml)
  • Olive Oil2/3 cup extra-virgin olive oil (160 ml)
  • SaltKosher salt (2 g)
  • PepperFreshly ground pepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Capers, Mint, Parsley, Turnip Greens, Lemon Juice, Olive Oil.
  2. Add finishing notes: Anchovy, Garlic, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
