Ingredients

  • Soy Sauceabout 3 Tbsp (50 ml)
  • Lime Juicejuice of 2 limes (60 ml)
  • Pickled Ginger30 ml pickled ginger juice
  • Mustard Seed2 tsp yellow mustard seeds (10 ml)
  • Olive Oil1½ cups (375 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, LIME JUICE, SOY SAUCE.
  2. Season to finish: PICKLED GINGER (to taste), MUSTARD SEED (about 1 tsp).
  3. Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
