Ingredients

  • Mayo1 cup Dukes mayo (240 ml)
  • Sour Cream1 cup sour cream (240 ml)
  • Buttermilk1/2 cup buttermilk (120 ml)
  • Garlic2 cloves minced Garlic
  • Shallotabout 1 shallot (30 g)
  • Hot Sauce2 tsp hot sauce (10 ml)
  • Worcester1 Tbsp Bourbon Barrel Worcestershire (15 ml)
  • Parmesan1/4 cup finely grated local pecorino style cheese (60 ml)
  • Cider Vinegar2 1/2 Tbsp apple cider vinegar (37.5 ml)
  • Lemon Juice1½ Tbsp (22 ml)
  • Chives1 bunch chives (20 g)
  • Tarragon1 bunch tarragon (15 g)
  • Parsley1 bunch parsley (30 g)
  • SaltSalt to taste
  • PepperPepper to taste

Method

  1. Pour to the lines in order (bottom → top): MAYO, SOUR CREAM, BUTTERMILK, CIDER VINEGAR.
  2. Shake-to-line (dashed marks): add SHALLOT. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: ¼ BUNCH CHIVES, ¼ BUNCH TARRAGON.
  4. Season to finish: GARLIC (¾ clove), PARM (about 1 Tbsp), PARSLEY (about 5 Tbsp), SALT (to taste), PEPPER (to taste), HOT SAUCE (about ¾ tsp).
  5. Cap the jar and shake until emulsified.
