Ingredients

  • Red Wine Vinegar1/4 cup red wine vinegar or aged sherry vinegar (60 ml)
  • Balsamic2 Tbsp balsamic vinegar (30 ml)
  • Shallot1 Tbsp coarsely chopped shallot (15 ml)
  • Dijon Mustard2 tsp Dijon mustard (10 ml)
  • Salt1/2 tsp salt (2.5 ml)
  • Pepperfreshly ground black pepper to taste
  • Olive Oil3/4 cup mild extra-virgin olive oil (180 ml)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
