- Kiwi — 100 g of ripe kiwin
- Cilantro — 10 g of cilantro
- Olive Oil — 15 g of olive oil
- Shallot — 15 g of shallot
- Verjus — 10 g of Agraz-Verjus (Bodegas Robles)
- Salt — salt, as needed
Method
- Pour to the lines in order (bottom → top): Olive Oil, Verjus.
- Add finishing notes: Kiwi, Cilantro, Shallot, Salt.
- Cap the jar and shake until emulsified.
