Ingredients

  • Kiwi100 g of ripe kiwin
  • Cilantro10 g of cilantro
  • Olive Oil15 g of olive oil
  • Shallot15 g of shallot
  • Verjus10 g of Agraz-Verjus (Bodegas Robles)
  • Saltsalt, as needed

Method

  1. Pour to the lines in order (bottom → top): Olive Oil, Verjus.
  2. Add finishing notes: Kiwi, Cilantro, Shallot, Salt.
  3. Cap the jar and shake until emulsified.
