Ingredients

  • Dijon Mustard3/4 tsp Dijon mustard (3.75 ml)
  • Banyuls Vinegar2 tbsp Banyuls vinegar (or sherry) (30 ml)
  • Red Wine Vinegar1 1/2 tsp red wine vinegar (7.5 ml)
  • Lemon Juice1 tbsp lemon juice (15 ml)
  • Water1 tbsp water (15 ml)
  • Shallot1 1/2 tsp minced shallot (7.5 ml)
  • Garlic1/2 garlic clove, crushed
  • Grapeseed Oil1/4 cup plus 2 tbsp grape seed oil (90 ml)
  • Olive Oil1/4 cup extra virgin olive oil (60 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): GRAPESEED OIL, OLIVE OIL, BANYULS VINEGAR, LEMON JUICE, WATER.
  2. Season to finish: SHALLOT (about 2 tsp), GARLIC (½ clove), SALT (to taste), PEPPER (to taste), DIJON (about 1 tsp), RED WINE VIN (about 2 tsp).
  3. Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
