Ingredients

  • Beet1¾ cups roasted red beet (peeled 1" pieces, ~3–4 medium) (420 ml)
  • Garlic1 garlic clove crushed (or roasted)
  • Red Wine Vinegar1 tsp red wine vinegar (5 ml)
  • Almonds½ cup slivered almonds toasted skinless (120 ml)
  • Olive Oil⅓–½ cup olive oil (80 ml)
  • Salt1¼ tsp salt (6.25 ml)
  • Pepperabout ¼ tsp (0.5 g)
  • Parsley1 Tbsp parsley (optional) (15 ml)
  • Parmesan¼ cup grated Parmesan/pecorino (60 ml)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
