- A pesto is a raw, pounded or blended paste of fresh herbs or leafy greens, nuts, garlic, cheese, and oil, traditionally basil and pine nut but built the same way with other combinations. It's thicker and more textured than a loose herb sauce because the nuts and cheese give it body.
