Ingredients

  • Olive Oil½ cup olive oil (120 ml)
  • Cider Vinegar¼ cup apple cider vinegar (60 ml)
  • Maple Syrup1 Tbsp pure maple syrup or honey (15 ml)
  • Dijon Mustard1 Tbsp Dijon mustard (15 ml)
  • Poppy Seed1 tsp poppyseeds (5 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, CIDER VINEGAR, MAPLE SYRUP, DIJON.
  2. Season to finish: POPPY SEED (about 1½ tsp), SALT (to taste), PEPPER (to taste).
  3. Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
