Ingredients

  • Sherry Vinegar1/4 cup sherry vinegar (60 ml)
  • Shallot1/4 cup minced shallots (60 ml)
  • Lemon Juice2 tbsp lemon (30 ml)
  • Sugar1 tsp sugar (5 ml)
  • Olive Oil1/2 cup EVOO (120 ml)
  • Saltabout ¼ tsp (2 g)
  • Pepperabout ¼ tsp (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, SHERRY VINEGAR, LEMON JUICE.
  2. Add by count: 1 SHALLOT.
  3. Season to finish: SUGAR (about 1 tsp), SALT (to taste), PEPPER (to taste).
  4. Cap the jar and shake until emulsified.
