Ingredients
- Olive Oilabout 3 Tbsp (50 ml)
- Grapeseed Oilabout ⅓ cup (75 ml)
- Veg Stockabout 1½ Tbsp (20 ml)
- Raspberry Vinegar2 Tbsp (30 ml)
- Shallotabout 1 shallot (40 g)
- Dijon Mustard1 Tbsp Dijon (15 ml)
- Honey1/2 tsp honey (2.5 ml)
- Saltsalt
- Pepperpepper
Method
- Pour to the lines in order (bottom → top): GRAPESEED OIL, OLIVE OIL, RASPBERRY VIN, VEG STOCK, DIJON.
- Add by count: 2½ SHALLOTS.
- Season to finish: SALT (to taste), PEPPER (to taste), HONEY (about ¾ tsp).
- Cap the jar and shake until emulsified.

What if it separates?
Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
