Ingredients

  • Dijon Mustard1 tbsp Dijon mustard (15 ml)
  • White Wine Vinegar1 tbsp white wine vinegar (15 ml)
  • Water2 tbsp water (30 ml)
  • Vegetable Oil3 tbsp non-scented oil (45 ml)
  • Salt1 pinch sea salt
  • Pepper1 pinch black pepper

Method

  1. Pour to the lines in order (bottom → top): VEGETABLE OIL, WATER, DIJON, W.WINE VINEGAR.
  2. Season to finish: SALT (to taste), PEPPER (to taste).
  3. Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
