- Shallotabout 3 shallots (120 g)
- Dijon Mustardabout 3 Tbsp (38 ml)
- White Wine Vinegarabout 1½ Tbsp (25 ml)
- Waterabout 3 Tbsp (40 ml)
- Peanut Oilabout ⅔ cup (150 ml)
- Saltsea salt flakes
- Pepperblack pepper
Method
- Pour to the lines in order (bottom → top): PEANUT OIL, WATER, DIJON, W.WINE VINEGAR.
- Add by count: 4 SHALLOTS.
- Season to finish: SALT (to taste), PEPPER (to taste).
- Cap the jar and shake until emulsified.

What if it separates?
Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
