Ingredients

  • Coriander Seed12 g
  • Cumin2 tsp (5 g)
  • Dijon Mustardabout 2 Tbsp (29 ml)
  • Meat Concentra5 g
  • Olive Oilabout 1 Tbsp (16 ml)
  • Lime Juicejuice of ½ lime (15 ml)
  • Garlic Oil7.5 ml (½ tbsp) raw garlic oil

Method

  1. Pour to the lines in order (bottom → top): DIJON, OLIVE OIL, LIME JUICE, GARLIC OIL.
  2. Shake-to-line (dashed marks): add CORIANDER SEED, then MEAT CONCENTRA, then CUMIN. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Cap the jar and shake until emulsified.

What if it separates?

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.

Can I use it as a marinade and a sauce?

Yes, but keep the portions separate. Never pour marinade that touched raw meat, poultry, or seafood back over the finished dish unless you bring it to a full boil first. Set aside a clean portion before marinating if you want a table sauce too.
