  • Soft Boiled Eg25 g
  • Scallionabout 1½ scallions (20 g)
  • Celeryabout ½ stalk (15 g)
  • Sherry Vinegar1/8 cup sherry vinegar (30 ml)
  • Olive Oil1/4 cup olive oil (60 ml)
  • Ginger5 g
  • Garlic1/2 cloves garlic
  • Lime Zest1 g lime zest
  • Herbsabout ¼ bunch (5 g)
  • Waterabout 6 Tbsp (100 ml)
  • Espeletteabout ¼ tsp (0.5 g)
  • Saltabout ¼ tsp (2 g)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
