- Mintabout 1½ bunches (40 g)
- Rapeseed Oil1 cup + 2/3 cup rapeseed oil (400 ml)
- Olive Oil2/3 cup olive oil (160 ml)
- Lemon Juice1 cup lemon juice (240 ml)
- Dijon Mustard3 Tbsp Dijon mustard (45 ml)
- Brown Sugar3 Tbsp (36 g)
- Saltabout 1 tsp (7.5 g)
- Pepperabout 1 tsp (3 g)
Method
- Pour to the lines in order (bottom → top): RAPESEED OIL, LEMON JUICE, OLIVE OIL, DIJON.
- Add by count: ½ BUNCH MINT.
- Season to finish: BROWN SUGAR (about 2½ tsp), SALT (about ½ tsp), PEPPER (about ½ tsp).
- Cap the jar and shake until emulsified.

What if it separates?
Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
