In the published recipe, this is the finishing sauce for coffee-rubbed strip steaks.
Byres's sherry-red wine chimichurri for grilled steak.

Ingredients
- Sherry Vinegar¼ cup sherry vinegar (60 ml)
- Red Wine Vinegar¼ cup red wine vinegar (60 ml)
- Olive Oil2 Tbsp extra-virgin olive oil (30 ml)
- Sugar½ tsp sugar (2.5 ml)
- Shallot1 small shallot, minced
- Parsley¼ cup finely chopped parsley (60 ml)
- Cilantro1 Tbsp finely chopped cilantro (15 ml)
- Chives1 Tbsp finely chopped chives (15 ml)
- Oregano1 tsp dried oregano (5 ml)
- Saltabout ¼ tsp (2 g)
- Pepperabout ¼ tsp (0.5 g)
Method
- Pour to the lines in order (bottom → top): SHERRY VINEGAR, RED WINE VIN, OLIVE OIL.
- Add by count: 1½ SHALLOTS, ½ BUNCH PARSLEY, ¼ BUNCH CHIVES.
- Season to finish: SUGAR (about ¾ tsp), CILANTRO (about 2½ Tbsp), OREGANO (about 2½ tsp), SALT (to taste), PEPPER (to taste).
- Cap the jar and shake until emulsified.
