Ingredients

  • Tomato2 cups + 34 tsp Tomato (650 ml)
  • Soy Sauceabout 6 Tbsp (104 ml)
  • Olive Oil1 Tbsp olive oil (15 ml)
  • Mirinabout 1½ Tbsp (20 ml)
  • Rice Vinegar1/6 cup rice vinegar (40 ml)
  • Water1 cup (250 ml)
  • Xanthan3 g

Method

  1. Pour to the lines in order (bottom → top): WATER, SOY SAUCE, RICE VINEGAR, MIRIN.
  2. Add by count: 2½ TOMATOS.
  3. Season to finish: XANTHAN (about ¾ tsp), OLIVE OIL (about 2 tsp).
  4. Cap the jar and shake until emulsified.
