Ingredients
- Olive Oil¾ cup (176 ml)
- Carrot150 g
- Onionabout 1½ onions (160 g)
- White Wine1 cup (250 ml)
- Cider Vinegar35 tsp apple cider vinegar (175 ml)
- Thyme1
- Rosemary1
- Bay Leaf1
- Salt1 Tbsp salt (15 ml)
- Pepper1 Tbsp black pepper (15 ml)
Method
- Pour to the lines in order (bottom → top): WHITE WINE, OLIVE OIL, CIDER VINEGAR.
- Shake-to-line (dashed marks): add CARROT. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Add by count: ½ ONION.
- Season to finish: THYME (to taste), ROSEMARY (to taste), BAY LEAF (¼ leaf), SALT (about 1 tsp), PEPPER (about 1 tsp).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.
