  • Egg Yolk1 egg yolk
  • Eng Mustard1 tsp English mustard (5 ml)
  • Lime Zest1 lime, zested and juiced
  • Lime Juice1 lime, juiced
  • Olive Oil250ml olive oil
  • Salt1 pinch of salt (1 g)

Method

  1. This sauce needs a blender — the jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.
  3. Taste and adjust salt and acid.
