Method

Pour to the lines in order (bottom → top): OLIVE OIL, LIME JUICE, SHERRY VINEGAR.
Add by count: 1½ SHALLOTS, 1½ CHILES.
Season to finish: CUMIN (about 1½ tsp), CORIANDER (about 1 tsp), SALT (to taste).
Cap the jar and shake until emulsified.
