- Olive Oilabout 6 Tbsp (100 ml)
- Sherry Vinegarabout 1½ Tbsp (20 ml)
- Shallotabout 1 shallot (30 g)
- Chileabout 1½ chiles (10 g)
- Cumin1 tsp cumin (5 ml)
- Coriander1 tsp coriander (5 ml)
- Lime Juicejuice 1 lime
- Saltabout ¼ tsp (2 g)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, LIME JUICE, SHERRY VINEGAR.
- Add by count: 1½ SHALLOTS, 1½ CHILES.
- Season to finish: CUMIN (about 1½ tsp), CORIANDER (about 1 tsp), SALT (to taste).
- Cap the jar and shake until emulsified.
