Ingredients
- Garlic6 whole unpeeled garlic cloves (roasted)
- Olive Oil⅓ cup (80 ml) EVOO (incl roast)
- Lemon Zestzest of 1 lemon (2 g)
- Lemon Juicejuice of 1 lemon (30 ml)
- White Wine Vinegar1 Tbsp white wine vinegar (15 ml)
- Saltabout ¼ tsp (2 g)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, LEMON JUICE, W.WINE VINEGAR.
- Shake-to-line (dashed marks): add GARLIC. Spoon in, shake, and top up until the settled level reaches each dashed line.
- Season to finish: LEMON ZEST (about 1½ tsp), SALT (to taste).
- Cap the jar and shake until emulsified.
