Ingredients

  • Water⅓ cup water (80 ml)
  • White Wine Vinegar⅓ cup white wine vinegar (80 ml)
  • Salt2 tsp salt (10 g)
  • Bay Leaf1 bay leaf
  • Shallot1 shallot, sliced
  • Honey3 Tbsp honey (45 ml)
  • Rose Water200 g wild Nootka rose petals
  • Olive Oil¼ cup olive oil (60 ml)

Method

  1. Pour to the lines in order (bottom → top): Water, White Wine Vinegar, Honey, Rose Water, Olive Oil.
  2. Add finishing notes: Salt, Bay Leaf, Shallot.
  3. Cap the jar and shake until emulsified.
