- Olive Oilabout ⅔ cup (150 ml)
- Dijon Mustard1 tsp Dijon (5 ml)
- Chives1 tbsp finely chopped chives (15 ml)
- Dill1 tbsp finely chopped dill (15 ml)
- White Wine Vinegarabout 3 Tbsp (50 ml)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, W.WINE VINEGAR.
- Season to finish: CHIVES (about 1½ Tbsp), DILL (about 1½ tsp), DIJON (about 1½ tsp).
- Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
