- Rice Vinegarabout ¾ cup (200 ml)
- Mirinabout ¾ cup (200 ml)
- Light Soy23 tsp light soy sauce (115 ml)
- Garlic10 cloves garlic
- Shisoabout 2¾ bunches (40 g)
- Bonito20 g
- Grapeseed Oil2 cups + 14 tsp grapeseed oil (550 ml)
- Salt½ tsp (3 g)
- Sugarabout 1 tsp (5 g)
- Pepperabout ¼ tsp (0.5 g)
Method
- Pour to the lines in order (bottom → top): GRAPESEED OIL, RICE VINEGAR, MIRIN, LIGHT SOY.
- Add by count: ¾ BUNCH SHISO.
- Season to finish: GARLIC (2½ cloves), BONITO (about 2 tsp), SALT (to taste), SUGAR (to taste), PEPPER (to taste).
- Cap the jar and shake until emulsified.
