Ingredients

  • Lemon Juice7 tbsp / 100 ml fresh lemon juice
  • Fish Sauce1 tsp fish sauce (5 ml)
  • Red Wine Vinegar1 tbsp red wine vinegar (15 ml)
  • Honey2 tbsp fermented honey or honey (30 ml)
  • Anchovyabout 13½ fillets (54 g)
  • Garlic6 garlic cloves, minced
  • Parmesan1 cup plus 2 tbsp / 115 g freshly grated hard cheese
  • Sunflower Oil3/4 cup / 180 ml unfiltered sunflower oil
  • Salt2 tsp kosher salt (10 ml)
  • Pepper1 tsp freshly ground black pepper (5 ml)
  • Paprika1/8 tsp Hatch chile powder or spicy red paprika (0.62 ml)
  • Horseradish1 tbsp freshly grated horseradish (15 ml)

Method

  1. Pour to the lines in order (bottom → top): SUNFLOWER OIL, LEMON JUICE, HONEY.
  2. Shake-to-line (dashed marks): add PARM, then ANCHOVY. Spoon in, shake, and top up until the settled level reaches each dashed line.
  3. Add by count: 3 CLOVES GARLIC.
  4. Season to finish: SALT (about 1 tsp), PEPPER (about ½ tsp), PAPRIKA (a pinch), FISH SAUCE (about ½ tsp), RED WINE VIN (about 1½ tsp), HORSERADISH (about 1½ tsp).
  5. Cap the jar and shake until emulsified.
