Ingredients
- Orange Zestzest of 1 orange (2 g)
- Orange Juicejuice of 1 orange (45 ml)
- Lemon Zestzest of 1 lemon (2 g)
- Lemon Juicejuice of 1 lemon (30 ml)
- Lime Zestzest of 1 lime (1.5 g)
- Lime Juicejuice of 1 lime (30 ml)
- Honey1½ Tbsp honey (22.5 ml)
- Champagne1 Tbsp Champagne or white wine vinegar (15 ml)
- Salt1 tsp kosher salt (5 g)
- Pepperabout ¼ tsp (0.5 g)
- Olive Oil¾ cup EVOO (180 ml)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, ORANGE JUICE, LEMON JUICE, LIME JUICE, HONEY, CHAMPAGNE VIN.
- Season to finish: ORANGE ZEST (about ¾ tsp), LEMON ZEST (about ¾ tsp), LIME ZEST (about ½ tsp), SALT (about ¾ tsp), PEPPER (to taste).
- Cap the jar and shake until emulsified.
