Ingredients

  • Orange Zestzest of 1 orange (2 g)
  • Orange Juicejuice of 1 orange (45 ml)
  • Lemon Zestzest of 1 lemon (2 g)
  • Lemon Juicejuice of 1 lemon (30 ml)
  • Lime Zestzest of 1 lime (1.5 g)
  • Lime Juicejuice of 1 lime (30 ml)
  • Honey1½ Tbsp honey (22.5 ml)
  • Champagne1 Tbsp Champagne or white wine vinegar (15 ml)
  • Salt1 tsp kosher salt (5 g)
  • Pepperabout ¼ tsp (0.5 g)
  • Olive Oil¾ cup EVOO (180 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, ORANGE JUICE, LEMON JUICE, LIME JUICE, HONEY, CHAMPAGNE VIN.
  2. Season to finish: ORANGE ZEST (about ¾ tsp), LEMON ZEST (about ¾ tsp), LIME ZEST (about ½ tsp), SALT (about ¾ tsp), PEPPER (to taste).
  3. Cap the jar and shake until emulsified.
