  • Egg Yolkabout 2 yolks (36 g)
  • Dijon Mustard1 tsp Dijon (5 ml)
  • Canola Oil1 cup canola or grapeseed oil (240 ml)
  • Olive Oil½ cup EVOO (120 ml)
  • Cumin½ tsp toasted ground cumin (2.5 ml)
  • Salt½ tsp kosher salt (2.5 ml)
  • Pepper½ tsp cracked pepper (2.5 ml)
  • Chipotle1 Tbsp chipotle in adobo (15 ml)
  • Garlic1 Tbsp garlic, minced (15 ml)
  • Cilantro¼ cup cilantro (60 ml)
  • Lime Juice¼ cup lime juice (60 ml)

Method

  1. This sauce needs a blender. The jar is for storing it, not making it.
  2. Combine measured ingredients and blend until smooth.

This sauce uses raw egg yolk and is never cooked. Use pasteurized eggs if you, or anyone eating it, is pregnant, elderly, or immunocompromised. Keep it refrigerated and follow the source recipe for how long to keep it.

What if it separates?

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
