Ingredients

  • Olive Oil3 tbsp plus 2 tsp extra-virgin olive oil (55 ml)
  • Red Wine Vinegar1 1/2 tbsp red wine vinegar (22.5 ml)
  • Soy Sauce1 tbsp soy sauce (15 ml)
  • Sambal1 tsp sambal oelek (5 ml)
  • Spring Onion1 small spring onion or 2 scallions, thinly sliced
  • Green Tomato1 large green tomato, diced
  • Plum1 black plum, diced
  • Cherries1/2 cup sweet cherries, pitted and quartered (120 ml)
  • Nicoise Olives1/4 cup nicoise olives (60 ml)
  • Basil2 tbsp basil (30 ml)
  • Parsley2 tbsp parsley (30 ml)
  • Cilantro2 tbsp cilantro (30 ml)
  • Sorrel2 tbsp sorrel (optional) (30 ml)
  • Saltkosher salt (2 g)
  • Pepperpepper (0.5 g)

Method

  1. Pour to the lines in order (bottom → top): Olive Oil, Red Wine Vinegar, Soy Sauce, Sambal, Cherries, Nicoise Olives, Basil, Parsley, Cilantro, Sorrel.
  2. Add finishing notes: Spring Onion, Green Tomato, Plum, Salt, Pepper.
  3. Cap the jar and shake until emulsified.
