Ingredients
- Shallot — 50g, diced
- Garlic — 1 clove, sliced
- Red Wine — 150ml
- Sherry — 50ml
- Anchovy — 1 fillet
- Capers — 10g
- Tarragon — 15g, roughly cut
- Salt — 45g
- Peppercorn — 10g white peppercorns
- Sunflower Oil — 60ml
- Olive Oil — 400ml
- Balsamic — 300ml aceto balsamico
- Chicken Stock — 200ml Geflügelessenz (poultry essence)
- Honey — 3 EL (45 ml)
- Dijon Mustard — 1 EL mustard (15 ml)
- Mixed Spice — 1 EL Salatgewürz (15 ml)
Method
- Pour to the lines in order (bottom → top): Red Wine, Sherry, Sunflower Oil, Olive Oil, Balsamic, Chicken Stock, Honey, Dijon Mustard, Mixed Spice.
- Add: Shallot, Garlic, Sherry, Anchovy, Capers, Tarragon.
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove — cool leftovers to warm-to-touch before they go back in the glass.
