- Honey1 Tbsp honey (15 ml)
- Dijon Mustard1 tsp Dijon (5 ml)
- Red Wine Vinegar3 Tbsp red wine vinegar (45 ml)
- Lemon Zestzest of 1 lemon
- Lemon Juice2 Tbsp lemon juice (30 ml)
- Olive Oil1/2 cup EVOO (120 ml)
- Salt1/2 tsp kosher salt (2.5 ml)
- Pepper1/2 tsp black pepper (2.5 ml)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, RED WINE VIN, LEMON JUICE, HONEY.
- Season to finish: LEMON ZEST (about 1½ tsp), SALT (about ½ tsp), PEPPER (about ½ tsp), DIJON (about 1 tsp).
- Cap the jar and shake until emulsified.

What if it separates?
Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
