- Red Portabout 1½ cups (333 ml)
- Madeiraabout 1½ cups (333 ml)
- Noilly Pratabout 3 Tbsp (50 ml)
- Balsamic1 cup + 4 tsp balsamic vinegar (260 ml)
- Aged Balsamic25 tsp Aged Balsamic (125 ml)
- Saltabout 1½ Tbsp (30 g)
- Truffle Jus38 tsp truffle jus (190 ml)
- Dijon Mustard2½ tsp (12 ml)
- Corn Oil2 cups + 20 tsp corn oil (580 ml)
- Olive Oil2 cups + 3/4 cup olive oil (660 ml)
- Sugarabout 2½ tsp (10 g)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, CORN OIL, RED PORT, MADEIRA, BALSAMIC, TRUFFLE JUS, AGED BALSAMIC.
- Season to finish: SALT (about ½ tsp), SUGAR (to taste), NOILLY PRAT (about 1 tsp), DIJON (about ¼ tsp).
- Cap the jar and shake until combined.
- Pour into a cold pan and bring to a gentle simmer. The jar stays off the stove. Cool leftovers briefly before they go back in the glass, then refrigerate promptly.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
