- Capers1 Tbsp capers (8 g)
- Garlic1 garlic clove
- Dijon Mustard1 Tbsp Dijon (15 ml)
- Red Wine Vinegar1 1/2 Tbsp red wine vinegar (22.5 ml)
- Lovageabout 11½ leaves (8 g)
- Parsley1 bunch parsley (30 g)
- Arugulahandful arugula (20 g)
- Olive Oil3/4 cup EVOO (180 ml)
Method
- Pour to the lines in order (bottom → top): OLIVE OIL, RED WINE VIN, DIJON.
- Add by count: ¾ BUNCH PARSLEY, ½ BUNCH ARUGULA.
- Season to finish: CAPERS (about 1 Tbsp), GARLIC (1 clove), LOVAGE (13 leaves).
- Cap the jar and shake until emulsified.

What if it separates?
Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
