Ingredients

  • Green Chileabout ½ chile (10 g)
  • Garlic2 garlic cloves, crushed
  • Shallotabout ½ shallot (25 g)
  • Oregano1 tsp dried oregano (5 ml)
  • Parsleyabout ½ bunch (25 g)
  • Olive Oil3 Tbsp EVOO (45 ml)
  • Red Wine Vinegar1 Tbsp red wine vinegar (15 ml)
  • Salt¼ tsp sea salt flakes (1.25 ml)
  • Water1 Tbsp water (15 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, RED WINE VIN, WATER.
  2. Add by count: 3 GREEN CHILES, 6 CLOVES GARLIC, 3 SHALLOTS, 1½ BUNCHES PARSLEY.
  3. Season to finish: OREGANO (about 1½ Tbsp), SALT (about ¾ tsp).
  4. Cap the jar and shake until emulsified.
