Ingredients

  • Dijon Mustard1 Tbsp Dijon mustard (15 ml)
  • Garlic1/2 medium garlic clove, chopped
  • Shallotabout 1 shallot (30 g)
  • Red Wine Vinegar4 Tbsp red wine vinegar (60 ml)
  • Saltsalt to taste
  • Pepperpepper to taste
  • Olive Oil5 Tbsp olive oil (75 ml)
  • Grapeseed Oil5 Tbsp grapeseed oil (75 ml)
  • Lemon Juice1 Tbsp lemon juice (15 ml)
  • Cream3 Tbsp heavy cream or water (45 ml)

Method

  1. Pour to the lines in order (bottom → top): OLIVE OIL, GRAPESEED OIL, RED WINE VIN, CREAM, DIJON, LEMON JUICE.
  2. Add by count: 1 SHALLOT.
  3. Season to finish: GARLIC (½ clove), SALT (to taste), PEPPER (to taste).
  4. Cap the jar and shake until emulsified.

Oil and acid emulsions can separate in the fridge; that's the fat solidifying, not spoilage. Cap the jar and shake, or let it sit at room temperature a few minutes first, then shake again.
